I recommend all students hone at least one crafting discipline for the sake of expanding one's knowledge base. Weaponsmith, Huntsman, and Artificer specialize in weapon crafting. Armor can be crafted with the Armorsmith, Leatherworker, and Tailor disciplines. The Jeweler and Chef disciplines are useful for all professions. Crafting stations are available in all major cities and are marked on your map. You can have a maximum of two crafts active at one time.
